Tarragon (artemisia dracunculus) is a drought resistant perennial herb that is very unique. During growth, it seems to have little aroma but when the leaves or tops are harvested, the oils concentrate and begin emitting tarragon sweet smell.
Uses:
- Culinary It is used as seasoning particularly the vinegar. It's also used in vegetable dishes and soups, mild cheeses, egg dishes, fish and white sauces.
- Medicinal It is traditionally used to stimulate appetite and is also believed to be able to cure insomnia.
